This no-knead bread recipe is easy to make and super rewarding for the little amount of work that goes into making and baking the bread. The incredible sweet scent of the baking bread in the oven is just irresistible. This no-knead bread recipe is definitely a wonderful short-cut version of baking with wild yeast, but when you are in a hurry for a nice loaf this is the way to go!

Ingredients:

  • 3 cups bread flour (450 grams)
  • 1/4 teaspoon yeast
  • 1/2 teaspoon salt
  • 1 1/2 cups of warm water (130F) (360 ml)
  • Dutch oven (make sure the handles are metal)
  • (water to flour ratio is 1:2 cups)

Steps to make no-knead bread:

  1. Mix all the ingredients by hand (or a stand mixer) in a large bowl until everything comes together. The dough should be very soft, moist, and lumpy. Do not have to knead or thoroughly mix the dough. Make sure that the water is no hotter than 130F.
  2. Transfer the dough to a plastic container with a cap and let it sit at room temperature for 2-4 hours. Make sure that the dough is covered well so that the surface does not dry out. The amount of raising depends on the temperature of the room. For good results let the dough rise till it gets very bubbly and increases by 20-30%.
  3. Next, take the dough out of the container and move it onto a floured surface. And then shape the dough by folding the sides into the middle, and repeat this 10-15 times. Place the well-floured dough into a bowl covered with parchment paper and let it rise for about 1 hour, or until it doubles in size. Make sure to cover the dough with a towel to prevent drying.
  4. Preheat oven and dutch oven to 450F.
  5. Once the dough is ready, carefully take out the dutch oven and remove the lid. Pick up the dough by holding the sides of the parchment paper and place it in the dutch oven along with the parchment paper. Place the lid over the dutch oven and carefully move it back into the oven and bake for 20 mins. Once 20 mins are up, remove the lid and bake the bread in the dutch oven for 10-20 mins or until the crust is golden brown. Then take the bread out and tap the bottom of the bread, if it sounds hollow it is ready. 
  6. Let the bread cool off on a rack for 30 minutes before cutting.
